Introducing the chef

Masataka Yamauchi
When he was 15 years old he started working at a fish market and got a wholesale job.
After that, he quickly turned to sushi restaurants and gained extensive experience at several restaurants.
When he was 21 years old, he became independent as a traveling sushi chef, and mainly worked in the homes and villas of business owners, corporate offices, and auberges. After that, he launched the members-only Sushi Karasu, produced Daikanyama Sushi masa, and served as the manager of Minami-Azabu VIP limited sushi restaurant.

He goes to Toyosu Market every day to purchase fresh, high-quality ingredients, age them to the best condition, and sublimate them into toppings that go well with sushi.
